Rarities is served only here: a small, changing selection of coffees chosen for exceptional varietals and for processing methods at the experimental edge of the industry, prepared as a considered brew rather than something handed over in a paper cup. It is the closest thing London has to a tasting menu for coffee, and it is worth treating it as one \u2014 sit down, ask what is on, and let the bar walk you through it. Alongside both, the standard range runs espresso, batch brew and pour-over, with single origins rotating through the filter.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Whos_behind_it\"><\/span>Who&#8217;s behind it<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>WatchHouse was founded in 2014 by Roland Horne, in a restored nineteenth-century watch house in Bermondsey \u2014 a tiny building that once sheltered the men guarding the churchyard next door, and which gave the company its name and its odd, sanctuary-like aesthetic. The idea Horne has built the business on is called Modern Coffee, and it is a simple three-way bet: the coffee has to be specialty-grade, the room has to be designed properly, and the service has to be warm without being precious.<\/p>\n<p>The group now runs more than fifteen Houses in London plus sites in Bath, New York and the UAE, and it roasts its own coffee at its Coffee Lab. Wood, restrained colour, careful lighting, everything in the room chosen rather than accumulated \u2014 the WatchHouse house style, executed at boutique scale rather than in a big hall. Indoor seating is limited and the counter takes up a fair share of the room, so this reads as an intimate caf\u00e9, not a destination with wings.<\/p>\n<p>The courtyard is what changes the arithmetic. Set back from the street, planted, and enclosed by the surrounding buildings, it gives the House an outdoor room that feels private in a way that pavement tables in Mayfair never do \u2014 several reviews describe it as a secret garden, and that is roughly right. Dogs are welcome, which the courtyard makes easy. First, if Rarities is the reason you are coming, come when the House is not slammed and be prepared to sit down for it \u2014 this is a tasting, not a transaction, and rushing it wastes the coffee and the point of ordering it. Second, the retail wall here is the group&#8217;s biggest, so if you have been meaning to buy beans or a brewer, this is the address. Third, use the courtyard: most people looking at the frontage never realise there is outdoor seating behind it.<\/p>\n<p>One piece of brand context that explains the style.
